Four quarters sit inside a single square kilometre of wall, and the ramparts, the tunnels and the rooftops above the souk are the parts a fast day trip skips. A guided walk solves the Old City; a full day adds the Mount of Olives and the newer streets outside the gates.

Tel Aviv and Jerusalem both run coaches down to the shore, and most of them pair the float with Masada or the springs at Ein Gedi. What separates them is the pick-up hour, whether the entrance fees are in the price, and how long you actually get in the water.

Three things Israel does that nowhere else does.
Roman ruins and walled old towns line the whole Mediterranean. Water you cannot sink in, a desert fortress at first light and two markets that turn into dinner belong to this stretch of coast alone.
The Dead Sea Float
The shore sits roughly 430 metres below sea level and the water runs about ten times saltier than the Mediterranean, which is why nobody actually swims in it. You lie back and float, and twenty minutes is usually plenty. Most trips build in a beach with fresh-water showers because the salt has to come off, and pair it with mud dug from the same shoreline. Bring flip-flops for the salt crust underfoot, and do not shave that morning.

Masada at First Light
The Snake Path opens about an hour before dawn and takes most people 45 to 60 minutes in the dark; the cable car covers the same climb in three. Sunrise departures leave Jerusalem or Tel Aviv somewhere around two in the morning, which is the entire argument for them, because by ten the plateau is unshaded and well past 35 degrees in summer. Nearly every run drops down to the Ein Gedi springs afterwards.

Mahane Yehuda and Carmel
Jerusalem’s Mahane Yehuda is a produce market by day that opens as bars behind its own shutters after dark. Tel Aviv’s Carmel runs straight into the Yemenite Quarter and its kitchens. Tours here are eating rather than sightseeing: six to ten stops, hummus, halva, knafeh and a spice stall, and enough food that dinner afterwards is optimistic.

Tel Aviv starts at the beach and finishes late.
Bauhaus blocks, fourteen kilometres of promenade, and Jaffa’s flea market at the southern end. The city’s own tours are short and cheap; its coach parks are also where most of the country’s long day trips begin.

Most of the country can be arranged the night before from a hotel lobby. These cannot. They run on border crossings, two-in-the-morning departures and timed slots that are gone by the time you land.

From Friday sunset to Saturday night, Israel changes gear.
Intercity buses and the trains stop, much of Jerusalem shuts, and Tel Aviv thins out to the seafront. What still runs on a Saturday is anything with its own coach or driver: the Dead Sea and Masada departures, the Galilee loops, the Bethlehem crossings. Put the Old City on a weekday and the desert on the weekend.
